This morning the girls (sans Morgan) came over to mi casa for a delicious breakfast, if I do say so myself. On the menu was:
Southwestern breakfast quesadillas
&
homemade mixed berry "juice"
We discussed politics and oil among other things. Then we went shopping where I bought some darling dresses- on sale no less.
Afterwards, I got drunk. On the sun, that is. Katie and I floated around her pool and I am convinced the sun invaded my mind. I came home and crashed, woke up a few minutes later, and have been walking around in a fog.
Oh well, I will take this fog any day, because I am getting a rockin' tan.

Southwestern Breakfast Quesadilla
You need:
3 large eggs
Milk
Butter
Bacon
8 in. Corn Tortillas
Salsa
Sharp cheddar cheese
Course salt & ground pepper
Directions
Put 1 tbsp of butter in skillet
While butter is melting, crack the 3 eggs into a bowl and pour in 1-2 tbsp of milk
Whisk. Then pour into skillet and let it set.
Once eggs begin bubbling on top, slowly stir them around until desired consistency.
Once eggs are cooked, pour in desired amount of salsa. I did about 2 tbsp, then added a dash of course salt and ground pepper.
Fry bacon.
Once bacon is done, lay out a tortilla and sprinkle a generous amount of cheese. Add eggs and bacon, add another tortilla on top, and place in Quesadilla maker or on skillet, flipping until golden brown.
Makes about 4.
Homemade Mixed Berry "Juice"
You need:
Ginger ale
Mixed berries
Mixed berries
Directions:
Pour 3-4 cups of ginger ale into blender. Add fresh (or frozen) mixed berries and blend until the berries are a thick consistency.
Get a class of ice, fill with half ginger ale, and then spoon in the mixed berry sauce and stir. You are in for a treat!
